Tuna Cakes


Ingredients
  • 2 x 225 tins of tuna
  • 1 cup mashed potato
  • 1 tbs parsley
  • 1 egg
  • 1 lemon
  • Breadcrumbs
  • Olive oil

Method
  1. Combine tuna, mashed potato, parsley and egg
  2. Add zest of lemon and juice, season, mix thoroughly
  3. Form tuna mix into small cakes
  4. Roll in breadcrumbs
  5. Cook in pan with oil
