Ingredients (serves 2)
- 2 floury potatoes, sliced
- 2 tomatoes, thickly sliced
- 1 orange capsicum, in chunks
- Oil spray
- 2 frozen Dory fillets
- 4 tbs breadcrumbs with cheese and mixed herbs
- 2 tbs grated parmesan cheese
Method
- Oven at 220C
- Cook potatoes in boiling water and drain
- Place potatoes, tomatoes and peppers in a lightly greased baking dish
- Place fish on top
- Spray with Oil
- Prinkle with crumbs
- Bake for 20mins
- Add parmesan
- Bake for 10 more mins
