Creamy Chicken & Vegetable Korma (Healthy Food Guide)


Ingredients (serves 4)
  • Oil spray
  • 1 onion, chopped
  • 1 red capsicum, cut into 3cm peices
  • 500g chicken, cut into 3cm peices
  • 3 tbsp Korma paste
  • 400g chopped tomatoes
  • 300g kumara, chopped into 1cm peices
  • 150g green beans, halved
  • 1 cup corn kernels
  • 3/4 cup coconut milk light
  • 3 cups cooked rice

Method
  1. Oil in suacepan, add onion and capsicum, cook for 5 mins until soft
  2. Oil in frying pan, and fry chicken until brown - add to saucepan
  3. Curry paste in frying pan - cook for 1 min
  4. Add tomatoes and stir until boiling
  5. Add to saucepan
  6. Add kumara to saucepan
  7. Bring to mixture to boil and reduce heat to low
  8. Simmer covered for 30 mins until kumara tender
  9. Add beans and corn and cook for 5 more mins
  10. Add coconut milk and stir until warm
  11. Serve with rice
