Leek & Potato Soup

Simple hearty classic.... add some cream for vichychoise!

Ingredients (2 servings)
  • 30g butter
  • 1 leek
  • 1 1/2 cups chicken stock
  • 1 potato
  • salt and pepper
Method
  • Heat butter in pan
  • Cook leek for 10 mins
  • Add chicken stock and potato and cook for 15 mins
  • Blend
  • Add salt and pepper
